It's NOT Beginning To Look A Lot Like Christmas

Alright, Mother Nature. I live a short distance from the foothills. Just a little further are some of your most majestic and gorgeous 14,000 foot mountains. Yet, here I sit, on December 12 (which I know is technically still fall for another nine days) without a trace of snow and no sight of it in the 10-day forecast.

I know that I have previously ranted about our relationship in posts like Snow Day, Schmo Day, I've been excited about 18" of the fluffy white stuff in October with Let It Snow, Let It Snow, Let It Snow, and maybe over stepped my bounds with a very formal Memo, but really? It is December in Colorado and like my memo said regarding the tilt of the Earth's axis indicates seasons and converse to the timing of the previous memo in April, the fact that I drive to work before sunrise and drive home after sunset (keeping in mind that I work for the government, so it's not like I'm working ridiculous hours here), that would indicate that we are nearing the December Solstice in the Northern Hemisphere which means that we are entering winter.

I would really appreciate some more winter weather that includes some snow, some cooler temperatures, and some glistening fields of white. I am currently in need of some winter inspiration to get me into the holiday spirit since right now, Colorado looks dead and full of despair without the grass covered in white, pure snow. Not to mention all of these pushy shoppers really just test my patience. And the songs about Christmas just grind in the fact that some places are having a winter.

I realize that I can be demanding, but I'm really just looking for some semblance of normal for Colorado. I appreciate your attention to this matter and hope that the informal manner to which I have addressed this issue is met with better tidings than my forceable rant from April of 2009.

p.s. I have just been informed that it's snowing in Kentucky and Georgia. Not cool, Mother Nature. Not. Cool.

Holiday Harry

How can you resist this face?


He is so stinkin' cute!

Harry had his grooming appointment today and they dyed his mohawk green for Christmas. Now he's a super Holiday Harry with his green hair and red eyes. (He has allergies. Yes. My dog. Has allergies. He sneezes and has red eyes.)

So What and What I'm Wearing Wednesdays

Back again from Mama Dew, here's another edition of  "So What Wednesdays".


SO WHAT if...
  • I'm a tad late to work this morning? I look fabulous.
  • I do my makeup at my desk? I wear big sunglasses into work, no one sees me, and I don't have any work to do. (Literally, I'm at the mercy of what people file.)
  • I'm still buying things for myself even though it's almost Christmas? I had to stretch my imagination for the things on my list anyway and I'm not getting things from my list.
  • I have a Starbucks cold drink cup but have not intention of putting coffee of any sort in it? I really like to drink my water through a straw and how can you resist the candy cane straw?
  • I have aspirations of Martha and Paula, but settle for easier recipes? They give me the inspiration, I just don't need to waste away my evenings in the kitchen.
  • I make all those delicious things without gluten? I don't care if you can eat wheat because the things I'm serving for the masses taste good, if not better, than the stuff you're used to eating.
  • I combine blog posts? It's my blog and I do what I want.
Now, onto the fashion part of the post....

Here's what (mostly) I'm wearing this Wednesday. My dress has a little more grey and purple in it, but you get the idea.

Ummm.....YUM!!

OK, so I'm not Paula Deen, but I'm trying. In doing so, I follow homegirl on twitter, look through her recipes, and try to say "y'all" when I'm in the kitchen.

Well, low and behold, Mrs. Deen posted a link to this recipe for Brandied Cherry Cupcakes.

Now, I might not completely duplicate the recipe A) because I can't use flour and B) because it's a little more involved than Betty Crocker recipe, but not as lazy as a box. Anyway, what I really love about this is that you bake the cupcake in the jar! Then, once they are cooled, you frost and seal in the delicious freshness for gifting at a later date. What I also loved is the disposable spoon attached by a ribbon to instant enjoyment!

Seriously? How can you not eat one?!
I think that I will make a batch of these cupcakes-in-a-jar for my co-workers for the holiday and send them home with 4-packs (I only have five people that I would make them for, so that's an easy two-dozen cupcake feat.) I might not go all the way with the vanilla bean paste based frosting, but rest assured that I will blog about it!

Brandied Cherry Syrup Ingredients:
2 15-ounce cans of cherries in heavy syrup
½ cup brandy

Directions:
Combine ingredients in a medium-sized saucepan.
Bring to a boil and then reduce heat to medium-low.
Simmer for fifteen minutes. 

 
Use a sieve to strain out the cherries.  Reserve both the syrup and cherries.

Cupcake Ingredients:
2 cups all-purpose flour
1 ½ teaspoon baking powder
½ teaspoon baking soda
¾ cup unsalted butter, room temperature
1/3 cup sugar
1/3 cup honey
2 eggs
2/3 cup milk
Brandied cherry syrup from above
Brandied cherries from above
18 half pint mason jars

Directions:
Preheat oven to 350 F.
In a medium-sized mixing bowl, whisk flour, baking powder, and baking soda.
In another medium-sized bowl, beat butter, sugar, and honey until well combined.
Beat eggs and milk into the butter mixture.
Alternately fold the flour mixture and 2/3 cup of the cherry syrup into the wet ingredients.
Fold in all of the brandied cherries.
 
Scoop ¼ cup of batter into each mason jar.
 
Carefully, put the jars directly onto the oven rack – no baking sheet is needed.  Important: Do not put the lids on.
Bake for 25 minutes or until a toothpick comes out dry. 

 
Remove from oven and pour 1 tablespoon of cherry syrup into each jar.  The cupcake will absorb the syrup.

Frosting Ingredients:
1 cup unsalted butter, room temperature
3 cups powdered sugar
4 teaspoons vanilla bean paste
2 tablespoons milk
¾ cup mini chocolate chips

Directions:
Mix butter and powdered sugar until light and fluffy.
Mix in vanilla bean paste and milk until fully combined.
Fold in chocolate chips.
Pipe onto cooled cupcakes. 

Makes 18 cupcakes.

These gems are naturally gluten free! Not to mention I'm all for anything that tastes like rice krispie treats since rice krispies are not gluten free. 

Christmas Cookies Wreath Recipe (courtesy of Cooks Recipes)
Ingredients:
1/2 cup butter
4 cups miniature marshmallows (40 large marshmallows)
1 teaspoon liquid green food coloring
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
4 cups corn flakes
Red hot candies
Directions:
  1. In 2-quart saucepan melt butter and marshmallows over medium-low heat, stirring constantly. Add and mix quickly the food coloring, almond and vanilla extracts, then corn flakes.
  2. Drop by heaping tablespoonfuls on buttered waxed paper or aluminum foil. Quickly withbuttered fingers, shape into wreaths and decorate with 3 red hot candies each at the top of the "wreath".
  3. Cool completely. Store in sealed container in cool area.
Makes 3 dozen.
In addition to the cupcake jars and wreaths, I will also be making fudge and peppermint bark. These are both easy to make ahead of time and freeze. I use the recipe on the marshmallow creme jar and just melt the bricks of chocolate after pounding candy canes into submission.

Another Cute Christmas Card!

I think it's because I keep seeing all of these cute cards on everyone's blogs and receiving cards, but I have to share with everyone when truly adorbes ones come along!

For this edition, Mrs. E over at A Colorado Cupcake sent out this card she ordered from Etsy. Feel free to leave her love on her blog even though I'm blogging about her adorable card before she does! Oh, and Mrs. E, don't hate. I just couldn't help but share!

I should also share that my 90-year old grandma looked at it and said, "OH! Is that you?!" No, Grandma, I wouldn't get married, make a Christmas card about it, and casually show you after dinner.

Our First Christmas Card Has Arrived!!

We received our first Christmas card today...this was it!!

I love this time of year and all the snail mail that comes with all the inventive Christmas cards that people send. Although, this is a mighty big envelope to fill with this wreath!

All I need now is some snow in Colorado and it'll begin to look a lot like Christmas!

I "found" a great site. Polyvore, that let's you put together sets of things. It's where I made my Christmas list so I thought I would make one for what I'm wearing today, which happens to be Wednesday. (Nice alliteration if I do say so myself.) While the items may not be exactly the same, you get the general asthetic.
